- Egg Yolks 6
- Sugar 1/4 Cup
- Butter 1 tablespoon melted
- Heavy Cream 1/3 cups whipped
- cardamom 1 teaspoon ground
- Enriched Flour 2 cups sifted
- salt 1/2 teaspoon
- confectioner sugar 1 cup
Baking Instructions:
Beat egg yolks till thick and lemon colored. Gradually beat in sugar. Gently stir in butter. Fold in whipped cream and cardamom. Sift together flour and salt. Gradually fold in enough flour/salt mixture to make a soft dough. Devide dough in half. On lightly floured surface, roll each piece to 1/8” thickness. Cut in 3&3/4” strips ~1” wide. Cut strips on diagonal so ends have points. Cut a slit lengthwise in center and fold one end through the center. Fry a few at a time in deep oil (shortening is what grandma used) at 375F about 1 to 1.5 minutes (light golden and floating) then remove to a paper towl to drain. While still warm, sift confectioner’s sugar over cookies.
